The complete renovation of a salumeria and butcher's shop: refrigerated counters, custom back counters, shelving and wall units, from design to installation in twelve days.

A project by BM Italia and Fabio Gianoli

In Valfurva, in the upper Valtellina, Salumeria Macelleria Confortola is a village shop in the best sense of the word: the place where you buy and stop to talk. Renovating it meant working within a balance: the shop had to change its face, but whoever walks in had to find the bottega they know — and whoever works there, their own gestures, improved.

Designer Fabio Gianoli developed the design drawings for the project; BM Italia handled the engineering and the realisation of the new layout: from the counter line to the ceiling.

 

Our contribution

The heart of the shop is the service counter line: ventilated refrigerated counters in stainless steel with straight lift-up glass, lower cold storage and warm-white LED lighting, designed to bring out the best in the products on display. The front is clad in varnished three-ply spruce — the same wood as the cash counter, made to measure with a Dekton worktop. A single continuous line, nearly five metres long, joining the technology of refrigeration with the warmth of the material.

Behind it, the back counters are shaped around the daily work: the bread area with a solid-wood basket and compartments for paper bags, the meat area with a stainless steel chute and a shaped corner unit for the slicer. Dekton worktops, solid-wood shelves, custom upstands — every centimetre thought through with the people who work there every day.

The supply is completed by shelving with a black powder-coated metal frame, refrigerated wall units for cured meats and frozen goods, a service platform finished in non-slip linoleum, and the new ceiling in oak-finish panels: a timber ceiling that warms the space and gives the shop its shape from above.

 

The result

A bottega that has stayed itself while becoming new. The counters put the product on stage, the back counter works without drawing attention, and the wood — from the spruce of the counter fronts to the oak of the ceiling — holds everything within a single atmosphere.
