From concept to commissioning: The 5 stages of a turnkey professional kitchen project

Phase 1 — Consultancy and operational flow analysis

Everything starts with a study. Before drawing a single layout or selecting a single piece of equipment, it is essential to understand how the operation truly works: how many meals per day, at which times, with what type of product, how many people work in the kitchen and with what skills.

This work is called operational flow analysis and includes rigorous mapping of all internal routes: from the reception of raw materials to storage, from preparation to cooking, from distribution to dishwashing. The goal is to eliminate cross-contamination — one of the most common and most costly errors — and to optimise every work area based on actual production volumes.

The result of this phase is a feasibility study that defines the technical parameters of the project and becomes the foundation on which everything else is built.

Phase 2 — Custom design and 3D rendering

Once the flows have been defined, the actual design begins. The BM Italia team develops executive layouts in which every element — cooking island, cold room, washing area, preparation counters — is positioned according to staff ergonomics, optimised routes and current health and safety regulations.

The most innovative part of this step is the creation of photorealistic renderings: the client can literally "walk into" the kitchen before it exists, checking dimensions, working heights, emergency routes and sightlines from every workstation. This eliminates surprises on site and drastically reduces variations during construction — with a real saving in time and budget.

Phase 3 — Brand partner selection

BM Italia does not manufacture equipment: it selects, integrates and installs the best technologies available on the global market. This means that every project is assembled by choosing, for each function, the brand that offers the highest performance in that specific context.

Intelligent convection ovens with remote HACCP monitoring, multifunction blast chillers, custom induction cooking systems, professional ice machines, industrial dishwashers with steam energy recovery. Every piece of equipment is integrated within a coherent ecosystem, in which cooking times are synchronised, consumption is monitored and maintenance is scheduled.

Phase 4 — Construction site management and commissioning

The construction phase is where design meets reality. BM Italia manages site supervision in a specialist manner.

Functional commissioning is the final step: every machine is tested under real operating conditions, monitoring systems are activated, and staff receive training on the use of the equipment. Only when everything works — not just technically, but operationally — is the system handed over.

Phase 5 — After-sales support and scheduled maintenance

A professional kitchen system is a complex installation running continuously. Its performance over time depends on the quality of preventive maintenance. BM Italia offers tailored programmes with original spare parts, calibrated to the usage profile of each facility, with the aim of eliminating the risk of system downtime.
